Q: We’re excited to feature Tecnomac in this edition of FHA Insider. Could you please provide our readers with a brief overview of your company and the range of products you offer?

We offer a wide range of products including blast chillers, retarder proofers, water chillers and refrigerated cabinets.

Our MINT line, which we will display this year at FHA-HoReCa, offers optimal temperature control. It offers an all-in-one array of blast chilling, shock freezing, thawing, conservation, low-temperature cooking, and regeneration, with the possibility to combine these cycles. It’s a state-of-the-art blast chiller, perfect for pastry work, and yet its low-temperature cooking functions can slow-cook meat or fish and chill or blast freeze them when finished. Tecnomac ensures freshness in the kitchen!

Q: Blast chillers and freezers have become indispensable tools in modern kitchens. Could you elaborate on their role in enhancing food safety, quality, and operational efficiency?

Tecnomac can enhance food safety by keeping temperatures at safe levels. With cold or hot holding functions, users can lock in temperature and time values or allow for temperatures to be maintained for a continuous amount of time. Pre-set thawing cycles allow quality and efficiency to be maintained as well.

Food safety temperatures are important in the HORECA industry. In compliance with HACCP regulations, the powerful blast chiller can bring food down to regulated temperatures quickly. Between 5 and 63 degrees Celsius is the range where bacteria growth is at a higher risk. By speeding up the chill process, Tecnomac avoids this, as opposed to a conventional freezer which could take hours to bring down food temperatures and expose the food to unsafe temperatures.

Tecnomac ensures quality through locking in the moisture of the protein during the blast chilling and freezing. This doesn’t allow large amounts of liquid to escape in the thawing process, resulting in preserved moisture in the regenerated product, increasing quality and taste.

Q: Given the variety of blast chillers and freezers available, what key factors should foodservice operators consider when selecting the optimal equipment for their specific needs?

The MINT line is great because it allows the chefs to have an all-in-one piece of equipment. Other key factors that Tecnomac can offer are speed, reliability, and control. Having the flexibility to change parameters makes Tecnomac preferred in the industry.

Q: Sustainability is a critical concern in the food industry. How does Tecnomac incorporate eco-friendly practices and energy-saving technologies into its product design and manufacturing process?

Tecnomac launched the Reach blast chiller using R290 gas. R290 is a better refrigerant for the environment, as indicated by its Global Warming Potential (GWP). It’s the refrigerant of the future!

Customers who are interested in further reducing their environmental footprint choose the MINT as it is an all-in-one Multifunctional blast chiller, allowing them to save rental space and increase energy efficiency by cutting down the number of running appliances to just one. Using its multifunction ability for the Cook-Chill method, there is an average savings of 20 % on food costs.

Q: Food waste reduction is a significant challenge for the foodservice industry. How can Tecnomac’s equipment contribute to minimising waste and optimising resource utilisation?

Our equipment is perfectly positioned for completion of the Cook-Chill technique in which food can be prepared in bulk ahead of time, rapidly chilled via blast chiller, and regenerated upon service with preserved freshness. Regeneration with a Tecnomac MINT allows the user to select the time amount and humidity percentage to ensure the best quality is preserved. This allows us to help eliminate food waste and get the most out of ingredients that may otherwise go to waste.

Q: FHA-HoReCa is a major event for the HORECA industry. What made this year the perfect time for Tecnomac to join as an exhibitor and sponsor?

FHA-HoReCa is a great opportunity to showcase what Tecnomac can do through live demonstrations. We are proud sponsors of FHA-HoReCa and support the ongoing innovations in our industry. Because of the versatility of the MINT, we can support several competitions with just one piece of equipment.

In the FHA Bakery Challenge, the Tecnomac MINT can be used as a proofer, in the Asian Gelato cup, it can blast chill or blast freeze, and in the dessert and pastry challenges, it can perform high-quality functions for all pastry needs!
