We are a passionate team from Tain l’Hermitage, in the heart of the Rhone Valley’s rich fruit-growing country. When we journeyed deep into the world of fruit, we discovered suppliers with amazing flavours and skills, as well as some passionate people. Yet we have also seen practices which don’t respect people or nature, supply chains which aren’t always open and honest, and a race for quantity over quality, leaving flavour by the wayside.

This is why we decided to act to protect fruits’ future and flavour over the long term – and the future of the people who work with them too. We created Adamance along with our committed producers and with committed creators such as yourself.

We want our fruit purees to provide all the pleasure of a good ripe fruit, so we preserve the taste and colour of our fruit with no added sugars and no additives.

Q: Fruit characteristics play a crucial role in baking. What key factors should chefs consider when selecting fruit-based ingredients to ensure the best results in their creations?

When selecting fruit-based ingredients for baking, chefs should prioritise consistency in quality and taste. That is why our purées are made of nothing but real and ripe fruit. Choosing fruit-based ingredients that are sugar-free not only allows versatility in the applications but also puts the highlight on the natural flavours, vibrant colours, and the perfect textures that will elevate any of your creations.

Q: The fruit industry faces significant challenges related to sustainability and maintaining flavour quality. How does Adamance tackle these challenges to ensure the excellence of your products?

Adamance is proud to be a B Corp company! B Corp is the recognition of all the actions Adamance has taken since the brand was created to preserve the future of fruit, its flavour and those who work with it. It’s the culmination of a collective effort by our employees and partners. As part of the B Corp adventure, Adamance is constantly pushing its limits with the aim of being more inclusive, equitable and regenerative for people and living things. To us, it’s simply good common sense.

Being B Corp is an approach to fulfil our 4 commitments:

  • More respect for people and nature, with more than half of our fruit purées guaranteed with zero pesticide residue, for example.
  • More traceability, with 100 % of our fruit purées traced back to the variety and plantation, so you can tell your customers beautiful stories.
  • More fruit with our 100 % fruit range, with no added sugar or additives and a real ripe fruit taste.
  • More services. We want you to be proud and happy to use our purées, so we work day after day to reinvent the possibilities of fruit in your creations. Over 250 innovative recipes are available on our website.

Q: With the growing demand for high-quality, natural ingredients, how does Adamance maintain the integrity of your products throughout the sourcing and production process?

Our purées are made of nothing but ripe fruit. Working closely with each and every one of our fruit producers, we can ensure the consistency in our fruit purees. For instance, our IGP Syracuse lemons are harvested exclusively from January to March – “Primo Fiore”, as they say over there – to make sure the flavour is at its most powerful. And to keep the taste and colour of the fruit we use, with zero additives in our purées, a very innovative pasteurisation process, which is performed quickly at low temperatures, without oxygen.

Q: How can chefs use Adamance ingredients to enhance their pastry creations? Are there specific flavour profiles or combinations that they should explore when crafting desserts?

Adamance puree can enhance the taste of fruit in gastronomy: in cooking, ice-cream-making, pastry-making, chocolate-making, and mixology, among others. A good example of this is the Intense Mousse recipe by Adamance. Our intense mousse can be used as a replacement for your traditional fruit mousses in any context, and even in products where you normally don’t dare to use them, such as palate-cleansers, tarts, petit gateaux and plated desserts. It opens a whole host of possibilities to explore.

Q: FHA-HoReCa is a major event for the HORECA industry. What made this year the perfect time for Adamance to join as an exhibitor and sponsor?

This year was the ideal time for Adamance to join FHA-HoReCa as an exhibitor and sponsor due to our increasing dedication to the industry and our eagerness to present our carefully sourced, premium fruit products to a broader audience. The event offers the perfect opportunity to engage with chefs and industry professionals, share our commitment to sustainability, and demonstrate how fruits can enhance and inspire innovative culinary creations.

We are proud to introduce our new lychee puree at Adamance’s booth, 3F3-01. This product is rich and fruity, with sweet, lingering notes that capture the essence of lychees from Southern Madagascar, specifically from the Fort-Dauphin Anosy region. With a distinctive aromatic profile and zero pesticide residue, this puree exemplifies our commitment to quality and sustainability.
